20 Minute Cajun shrimp and sausage vegetable Meal

Confession: I am not a big cook. My friends who know me can attest to this. My family that lives with me knows this fact all too well. But if you can show me a 20 minute meal, sign me up!
Unfortunately, when it comes to cooking I look at it as more of a job than a joy. I struggle with all the work that goes into feeding this family of 6. The prep, the cook time, the serving, the mess, the cleaning. Ugh!
I know serving your family is supposed to be a labor of love… but I feel there’s much more labor than love. Feeding 4 guys every night of the week is no small feat. Their demand? Meat! Yes, I must make sure there is some kind of MEAT involved.
As much as I would love to, I cannot just focus on hot dogs and mac n cheese for the rest of our lives. I had to get out of the (mac n cheese) box and my comfort zone.
My guys tend to turn up their noses to light and healthy meals. They love hearty and heavy. So what’s a girl to do?
Combine both! Not only is this recipe healthy but it’s hearty and the flavor, friends, is insane!
I would also like to mention that this is by far the quickest and easiest recipe I have ever made. Very little prep, short cook time, and instant happiness.
And any time anyone says… one pan, one dish… I’m all in! One dish means very little mess which translates to very little clean up for this mama!

- 1 lb large shrimp peeled and deveined
- 14 ounce pork or chicken sausage sliced
- 2 medium zucchini sliced
- 2 medium yellow squash sliced
- 1/2 bunch asparagus sliced into thirds
- 2 red bell peppers chopped into chunks
- salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons Cajun Seasoning

- In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper, and salt and pepper. Add olive oil and cajun seasoning and toss until coated.
- Add to a large skillet and turn to medium-high. Cook for about 5-7 minutes until the shrimp is pink and the veggies are tender.
- Garnish with fresh parsley if desired and serve immediately.
Use large shrimp for the best results.
Frozen shrimp can be used, run them under cool water until the ice melts or defrost them the night before and drain well

This meal is a staple at our house… and it’s Healthy – don’t tell anyone. It is a total winner for all my guys and the girls too!
